Lucky Charm Treats


LUCKY CHARM TREATS

What you’ll need:

  • Large microwave-safe mixing bowl

  • 9x12 baking dish (if you want thick treats) or a larger cookie sheet pan (if you prefer thinner treats to use with cookie cutters)

  • Mixing spoon or spatula

  • Nonstick cooking spray

  • 1 cup measuring cup

Tasty ingredients:

  • 1 Pkg. (10oz., about 40) Large Jet-Puffed Marshmallows

  • 6 cups Lucky Charms Cereal

  • 3 Tbsp. Butter

Helpful Hints:

1) A plastic mixing spoon or spatula (versus wooden spoon) seems to work best to stir the melted ingredients (see #2 below).

2) Cooking spray is your friend with this recipe! Spray your bowl before you melt the butter and marshmallows to make clean-up easy. Spray your spoon before mixing the marshmallows, and finally, be sure to adequately coat the baking dish!

3) I opted to use 3.5 Tbsp. of salted butter as opposed to the 3 Tbsp. called for in the traditional Rice Krispies Treat recipe.

4) Wait until the treats are cool before cutting.

5) To keep your treats moist and prevent them from sticking to one another after slicing, use parchment or wax paper between each treat, and store your treats in an airtight container.

6) Last, but not least…DO NOT use diet butter, margarine OR off-brand marshmallows - you’ll just have to trust me on this! ;)

Directions:

Due to limited time, I used the microwave for this recipe - I highly recommend it!

1) Coat a large, microwave safe mixing bowl with non-stick cooking spray. Place butter in the bowl and melt in the microwave - approximately 30-45 seconds.

2) Add marshmallows to butter, stir to completely to coat the marshmallows (hope you sprayed your spoon with non-stick cooking spray first, or you may have a mess right now).

3) Place marshmallows in microwave and heat approximately 2 minutes.

4) The marshmallows will "puff up" after being heated, so be careful removing them from you microwave (as some may stick to the roof of your microwave oven). Stir marshmallows to ensure they are completely melted.

5) Add Lucky Charms and stir completely, ensuring cereal is well coated with marshmallows.

6) Press the cereal mixture into your baking dish or sheet pan, which you’ve previously coated with non-stick cooking spray. If the spoon or spatula won’t quite do the trick, spray your fingertips with non-stick cooking spray and finish the job!

7) Now, just wait for them to cool about 15 minutes, then slice and enjoy.

8) Within about an hour after cooling completely, slice and store in an airtight container.

If you’re a really awesome mom, you may have a shamrock shaped cookie cutter in your kitchen, which would certainly be a festive way to cut and serve these special treats. (Maybe I’ll get one by this time next year!) Happy St. Patty's Day!
